(Altered slightly from Joy of Cooking, not my own recipe.)Makes 8 Individual CakesHave all ingredients at room temp. Preheat oven to 400 degrees F. Spray 8 muffin cups with Pam.In the top of a double boiler or in a microwave on medium, heat, stirring often, until the chocolate and butter are melted and smooth, the chocolate and butter. Next sift in the cocoa and stir until smooth. In a medium bowl, beat the egg whites on medium speed until soft peaks form. Gradually add the sugar while beating on high speed. Beat until the peaks are stiff but not dry. Use a rubber spatula to fold one-quarter of the egg whites into the chocolate mixture, then fold in the remaining whites.Fill the muffin cups about three-quarters full. Bake until the cakes are cracked on the top but still gooey in the benter, 7 to 8 minutes. Let sit for 2 to 3 minutes, the cakes will shrink slightly from the sides of the pan.
