Line cookie sheet with parchment paper. Spread layer of saltines on top, 1 whole sleeve. Put butter, coconut oil and sugar in saucepan on stove medium high heat. Stirring constantly to incorporate ingredients and bring to light boil. Remove from heat and stir in vanilla. Pour gently over crackers and spread out. Bake 10 minutes, turn off oven and remove. Carefully even out crackers as needed. Sprinkle bag of chocolate chips evenly. Return to warm oven 3-5min, to melt chips. Remove and smooth out chocolate evenly. Sprinkle sea salt and coconut on top.
