Here is how you make Chocolate Coconut Walnut Tofu Mousse:

1. In a medium sauce pan add cocoa, salt, & sweeteners to water & coffee and beat on low speed w/ an electric mixer while heating over medium heat to a modest boil until thickened. Remove from heat.2. Add walnuts, coconut oil and tofu into a blender and add hot pudding mixture and fully blend on medium-high speed until fully blended--about 1-2 minutes to add fluffiness/air. For variation, try adding one whole medium banana and remove a packet or two of sweetener as desired. Also wonderful is a 1/4 tsp of pure peppermint extract to give that lovely chocolate-mint flavor. No dairy--unless you can't resist to hit the top w/ a little whipped cream :o). Toasted coconut on top is nice as well.Pour into pudding cups, chill fully and enjoy! Did I mention a little whipped cream on top is entirely up to you? ;o)Serving Size:? 6oz pudding cup.
