First, cream butter, sugars, egg, and vanilla:

1 1/2 cup butter, softened
1 cup granulated sugar
1 cup brown sugar, packed
2 eggs
4 tsp vanilla

Second, mix the following dry ingredients in a bag, sifter, or bowl to disperse the xanthan gum and baking soda:

1 1/2 cups oat flour
1/2 cup tapioca flour (starch)
1 tsp xanthan gum
1 1/2 tsp baking soda

Third, combine the above wet and dry ingredients, then add the following:

4 cups oats
1 cup oat bran
2 cups walnuts
300 gram extra large dark chocolate bar cut into chunks.

Preheat oven to 350 F1st: Cream butter, sugars, eggs, and vanilla until fluffy.2nd: Mix dry ingredients3rd: Mix creamed ingredients with dry ingredients.4th: Add oatmeal, walnuts, and chocolate.5th: Spoon onto greased cookie sheet and bake at 350 F for approximately 10 minutes. DO NOT OVERBAKE. Pull them out when they are browning but still soft on top. Note: I chop up a medium to generic quality 300g dark chocolate bar( aprox. 3.5" x 12") instead of using chocolate chips. I like the larger chunks, and I find it is often cheaper than buying chocolate chips. The larger chunks make the cookies seem chocolatier even if there is only one per cookie.
