This is my take on the oatmeal cookie recipe you find on the inside of the container of oatmeal. These substitutions can be made in most any cookie recipe to lower the fat and make them vegan-friendly. I replaced butter with canola oil and the eggs with unsweetened applesauce, replaced a portion of the all-purpose flour with whole-wheat, and added dark chocolate chips to the mix to conquer my chocolate cravings.
