This is an old family recipe handed down from my great-grandmother. Now in it's 5th Generation (my daughter makes them with me). It makes a dozen, dozen cookies and they make an excellent gift!Also the recipe is easily halved if you don't have room for so many. They are also really good frozen (it's great for cooling down hot tea) and once defrosted there is no loss in texture either.The bonus in that instead of oil these cookies are made with applesauce, giving the cookie a moist cakelike bite without adding tons of fat. Butter- softened overnight1 box dark brown sugar 2 cups white sugar 6 eggs 1 tablespoon vanilla 4 cups of plain applesauce (if needed) 1 bag of chocolate chips 4 cups walnuts, chopped Dry Ingredients: 8 cups oatmeal (Quick Oats) 6 Cups Flour 3 tsp Baking Soda 1 tblsp Cinnamon How Do I Make Nanna's Rooster Cookies (Oatmeal and Chocolate Chip)?Here is how you make Nanna's Rooster Cookies (Oatmeal and Chocolate Chip): 1. Mix first 8 ingredients together2. Mix Dry Ingredients together.3. Slowly incorporate dry ingredients into wet.4. Let stand for about 10 minutes5. Grease several cookie sheets.6. Test dough to see if it spreads. If it does spread add in a little more flour.7. Spoon by tablespoons onto cookie sheets about 2 inches apart.8. Bake in a preheated oven at 350 degree F for 12-16 minutes, until tops are a little dry and bottoms are light brown. (it's best to check by flipping over a cookie to see if the bottom has started to brown)9. Pull the hot cookies from the oven and allow to rest on cookie sheet for a few minutes. Then transfer cookies to a cooling rack, or a table lined with papertowel. Allow cookie sheet to fully cool before adding more cookies.
