These cookies are adapted from a Smitten Kitchen recipe. I'm not a fan of raisins or walnuts, but I love Craisins and dark chocolate! So I created this craisin, chocolate-y concoction with a few adaptations on the original recipe. Such as: doubled the vanilla, doubled the cinnamon, used raw cane sugar instead of brown, thick Irish oatmeal for texture, etc. These cookies are tasty and filling; sometimes I eat them in lieu of a Kashi granola bar. What Are The Ingredients For Oatmeal Chocolate Craisin Cookies of AWESOME Recipe?The ingredients for Oatmeal Chocolate Craisin Cookies of AWESOME are: 1 cup (2 sticks or 8 ounces) butter, softened1 1/3 cup raw cane sugar 2 eggs 1 teaspoon vanilla extract 1 1/2 cup all-purpose flour (whole wheat or unbleached preferably) 1 teaspoon baking soda 1 teaspoon ground cinnamon (more to taste) 1/2 teaspoon salt (I often use more, but I like more salt in my baked goods) 2 cups Irish oats 3/4 cup craisins 1/2 cup dark chocolate chunks or chips How Do I Make Oatmeal Chocolate Craisin Cookies of AWESOME?Here is how you make Oatmeal Chocolate Craisin Cookies of AWESOME: Preheat oven to 350?F (175?C).In a large bowl, cream together the butter, brown sugar, egg and vanilla until smooth. In a separate bowl, whisk the flour, baking soda, cinnamon and salt together. Stir this into the butter/sugar mixture. Stir in the oats, raisins and walnuts, if using them.Chill the mix briefly (10-15 minutes). Spoon a tablespoon sized ball a few inches apart on the cookie sheet (these don't require parchment paper but I recommend it). Bake for 10-14 minutes or until uniform in color in the center.
