1/2 cup canned pure pumpkin puree (not pumpkin pie filling)
1/2 cup raw sugar
1/4 cup canola oil
1 tablespoon unsweetened apple sauce
1/2 tablespoon vanilla extract

Dry Ingredients;
1 cup white whole wheat flour (original recipe recommends AP flour)
1 tsp baking powder
1/2 teaspoon baking soda
dash of kosher salt (optional)
1 tsp cinnamon, ground
1/8 tsp cloves, ground
1/8 tsp allspice, ground
1/8 tsp ginger, ground

1 cup vegan semi-sweet chocolate chips (I used Nestle Semi-Sweet Chocolate Morsels, they don't have vegan chips at Walmart and I didn't know that Nestle's used powdered milk)

Here is how you make Vegan Pumpkin Chocolate Chip Cookies:

Preheat over to 350 degrees Farenheit.Mix all wet ingredients in with a hand-held electric mixer in a bowl. In a separate. larger bowl, whisk dry ingredients together. Stir wet ingredients into dry just until combined. Fold in chocolate chips. Let dough rest 10 minutes.Roll dough in hands to form a small balls and place on ungreased cookie sheet. You can use a small cookie scoop if you have one. Press down on cookies lightly with one finger to flatten. These cookies do not spread, and I was able to fit 12 cookies per sheet.Bake Cookies for approximately 10-12 minutes (it was more like 12-15 for me) until edges/underside of cookie takes on golden hue. Remove cookies from cookie sheet (not pan) to cooling rack. Cookies should be soft and "cake -like" once they have cooled. Store in cookie jar.
