Makes 2 dozen cookies. (freezes well after baking)Preheat oven to 350 degrees.Cream coconut oil, egg, honey, molasses, and vanilla. Add salt and baking soda. Add remaining ingredients stirring in chocolate chips by hand once mixed. Bake on a stone or on a baking sheet that has been lightly oiled or lined with parchment paper. Bake for 12 to 15 minutes until cookies no longer look "wet" on the surface. Cookies will be soft, but will firm slightly after cooling. Let them rest on a cooling rack until cool enough to handle and store in a closed container.
