2 Diet Hot Cocoa mix (25 calorie)
1/2 C egg subsititute (like Egg beaters)
2 Tbs. semi-sweet mini chocolate chips
1 tsp Splenda
1/8 tsp salt

Place chocolate chips and cocoa in a tall glass. Add 12 oz. boiling water and stir until cocoa and chips have dissolved. Place glass in freezer to chill for 25 minutes. Preheat oven to 350. Once cocoa has chilled stir and mix with other ingredients. Whip batter for 2 minutes with wire whisk or fork. Spray 12 cup muffin pan w/ non stick cooking spray or line with baking cups.
