Cream shortening and sugar. Add egg and molasses. Add ground ginger, salt, baking soda and flour. Stir in finely chopped ginger. I usually process the candied ginger with part of the flour in the food processor to save time. Works really well.Bake on greased sheets for about 8 to 10 minutes.
