Dark Chocolate Mousse

Serves 4 - Ready in 30 minutes + 2 hours in the fridge

Ingredients

* 150g dark chocolate
* 5 eggs, separated

Preparation

Break the chocolate and put it in a small saucepan or heatproof bowl over a pan of simmering water until it is completely melted and stirring occasionnally.

Pour the melted chocolate in a bowl. Add in the egg yolks, one by one, mixing energetically between each.

Put the egg whites into a large clean bowl. Whisk until they stand up in peaks. In order to ensure the result, the egg whites should be cold (take them out of the fridge just before whisking them) and I add in a pinch of salt.

Stir the egg whites a little at a time in the chocolate mixture and mix very carefully. Do not rush otherwise your chocolate mousse will be heavy. If you've got any lumps, you can get rid of them by making quick circular movements at the surface of the mixture with a wooden spoon. It's important to make that only on the surface of the mixture!

Once you've stirred in all the egg whites, pour the mousse in glasses or ramequins or cups and leave to set in the fridge.
