Makes 6 half-cup ramekin servingsThe morning before you make this, put your tin of evaporated milk in the fridge to chill. If (like me) you forget, put it in the freezer for as long as you can. The colder it is, the creamier it will become when you whip it up.Dissolve the gelatine in the boiling water then add the coffee powder and stir to mix.In a microwave proof jug, pour 1/3 cup of the evaporated milk, sift in the cocoa powder, stir in the chocolate chips. Microwave on MED-HIGH in 30-60 sec bursts, stirring each time, until the chocolate chips have dissolved. Chill for about an hour or until just starting to set. Whip the remaining 1/3 cup chilled evaporated milk until it has the texture of thick cream and peaks stand up by themselves.Fold in the chocolate mix (if you've left it a bit long and it's set firmer then beat it in).Pour into individual ramekins and leave in fridge to set.The kids enjoy this sprinkled with mini marshmallows and served with icecream wafers.
