Spray muffin tin. Soak oats for 1/2 hour in almond milk. Add the oat/milk mixture with the yogurt and egg whites in one bowl. In another, mix all the dry ingredients together, except chocolate chips. Mix wet and dry with a large spoon. Fold in chocolate chips. Pour into muffin tins. I made 12 regular size muffins, but since the muffins are so rich I would recommend mini muffins instead. Bake for 20 - 25 mins. It's best to leave them a little gooey in the middle, so check them periodically.
