1 c oats
1 c almond breeze unsweetened vanilla
1 c flour
2/3 c splenda brown sugar blend
2/3 c dannon light n fit vanilla yogurt
2 egg whites
1 tsp baking powder
1/2 tsp baking soda
5 tbsp cocoa powder
1/2 tsp salt
1 c chocolate chips (I used Hershey's Special Dark)

Here is how you make Dark Chocolate Oat Muffins:

Heat oven to 400 degrees. Spray muffin tin. Soak oats for 1/2 hour in almond milk. Add the oat/milk mixture with the yogurt and egg whites in one bowl. In another, mix all the dry ingredients together, except chocolate chips. Mix wet and dry with a large spoon. Fold in chocolate chips. Pour into muffin tins. I made 12 regular size muffins, but since the muffins are so rich I would recommend mini muffins instead. Bake for 20 - 25 mins.
