1/2 c heavy cream (be sure to avoid carageenan)
2 Tbls canola oil
1/3 c club soda

Here is how you make Lo Carb Giant Chocolate Muffins:

Prepare a giant muffin pan with paper liners. Preheat oven to 375 F. Measure all dry ingredients into a medium mixing bowl and whisk to combine. Measure all wet ingredients except club soda into a smaller bowl or pitcher and mix with a fork. Pour into the dry ingredients. Add the club soda and stir everything vigorously to combine. Batter will be stiff. Divide the batter evenly into the prepared pan. Bake for 20 minutes or until a tester poked in the middle of a muffin comes out clean.
