Not exactly healthy, but a definite improvement over the first recipe that had 1 cup of canola oil (!). To make it tender, it was important to increase the amount of leaveners. Also, you need to increase the amount of spices to make up for losing the fat. Trust me, my husband's office loves these bars and never guessed that they were reduced-fat! It also makes a ton of bars for the recipe, making it a perfect treat to bring to work. I have made it as a 3-layer cake for a party before (frosting just the tops so you can see the gorgeous layers). That was a hit and people only needed tiny slices.

3 tablespoons butter, softened
2 teaspoons milk (as needed to thin frosting)

4 cups powdered sugar, sifted

To make the batterPreheat oven to 350In a large bowl, whisk together pumpkin, applesauce, oil, eggs, and sugars until combined.In a medium bowl, whisk together flours, baking powder, cinnamon, baking soda, salt, ginger and cloves.
