If you wish to fill the pan--to have a really jellyroll-sized dessert, try doubling or even tripling the measures noted below.1/2 tsp baking powder 6 TBSP unsweetened cocoa 1/4 c egg substitute-I use 'Better n Eggs' (for 2 egg yolks; course you may use 2 egg yolks--just change the calorie count) 1/3 c All Whites (egg whites in carton)-- (or 2 egg whites, if you wish) 6 TBSP flour 3/4 c Splenda (for granulated sugar) 1 tsp vanilla extract Pam Spray 1 c Cool Whip Free (Just add in the extra calories if you wish to add more Cool Whip) How Do I Make Chocolate Roll?Here is how you make Chocolate Roll: Makes about 6 small or 3 large servings. (Calorie count here is based on 6 servings.)1. Preheat oven to 400 degrees F.2. Coat a jellyroll pan with Pam. Line with waxed or parchment paper. Spray with Pam again. 3. Place a sheet of aluminum foil on counter, topped with sheet of waxed or parchment paper that has been dusted LIGHTLY with cocoa (or confectioners sugar). You will want this to be instantly ready when the baking is complete.4. Except for Splenda, sift all dry ingredients together.5. Beat egg (yolk) substitute with Splenda; gently add sifted ingredients to the yolk mixture. 6. Beat egg whites and vanilla together using electric mixer--and beating til mixture is high and fluffy. Fold whites mixture gently into flour and yolk mixture.7. When completely mixed, pour batter onto jellyroll pan that has been prepared as described in step #2. Try to level out the mixture.8. Bake at 400 degrees for 12 minutes.9. As soon as the chocolate roll is finished baking, place on aluminum foil/parchment paper setup as described in # 3. Immediately roll up and allow to cool in that rolled up position.10. When cool, unroll and spread with 'Cool Whip Free' and roll up again, gently.11.
