Remove from mixer and stir up fro bottom to ensure that everything is mixed well. Refrigerate for 30-40 minutes. Use a silpat or parchment paper on cookie sheets. Set oven to 375 degrees. Use a small ice cream scoop or form into walnut sized balls. Put some granulated sugar in a shallow bowl and add cookies. Roll all over in sugar and set on baking sheet. Bake 8 minutes for soft cookies, 10 minutes for crispy. After removing from oven sprinkle with sugar again, then remove to rack to cool. Store in closed container.
