Preheat oven to 350 degrees. Line cupcake pan with 7 paper baking cupsSift together the flour, baking soda & salt in a bowl & set aside.Place the butter in the bowl of a stand mixer. Beat on medium speed until light & fluffy. Stop & add the sugar. Then beat on medium speed until well incorporated (3-5 min). Add the egg, mixing slowly after it is added.Combine the vanilla extract, milk & coffee in a large liquid measuring cup. Add 1/3 of flour mixture to the butter mixture & then gradually add one third of milk mixture, beating slowly, until blended. Add another 1/3 of flour mixture, followed by another 1/3 of milk mixture. Stop to scrape down the bowl as needed. Add the remaining flour mixture, followed by the remaining milk mixture & mix slowly until just combined. Add the cocoa powder, mixing on low speed until just blended.Using a standard size ice cream scoop, fill each baking cup so that it is 2/3 full. Bake for 20-30 minutes (start checking at 20min) or until toothpick inserted into the center of a cupcake comes out clean.
