1. Combine crumbs, syrup, powdered sugar, and peanut butter. Mix until filling is well combined, breaks into large chunks, and resembles dry(ish) cookie dough. I mixed the mixture by hand, and it was fine.2. Melt chocolate as directed on the package. If using a microwave, make sure to heat it in 20-30 sec intervals, stirring as needed. Set aside.3. Divide filling into 24 balls (compact shapes that will fit in the mini muffin pan wells). Keep in mind that when the filling is in the wells, there should be enough room to cover it with chocolate. Set aside (on wax paper).4. Using a small pastry brush (or a small, clean paintbrush), liberally spread chocolate inside the base of each mini muffin liner. Try to make your coating as even as possible. In a pinch, you can also use a dull knife tip. Using a spoon to coat the cupcake liners can be very cumbersome. It works best to put the mini muffin cups in a muffin pan, to help them hold their shape.5. Put coated muffin liners in the freezer to harden for 15-20 min.6. After chocolate has hardened in the base of the liner, divide peanut butter filling among chocolate wells. Spoon chocolate over each filling until completely covered. 7. Place the pan in the freezer for 20 minutes to set up. The peanut butter cups will last up to 3 weeks in the refrigerator or up to 2 months in the freezer.
