8 oz. cream cheese
1/4 c. butter or margarine, softened
2 tsp. vanilla
1 c. powdered sugar


How Do I Make Chocolate Zucchini Roll?

Here is how you make Chocolate Zucchini Roll:

In a mixing bowl, beat eggs and vanilla. Combine dry ingredients in a small bowl; add to egg mixture and mix well. Stir in zucchini. Spread into a greased and waxed paper lined 15" x 10" x 1" pan. Bake at 350 for 15-20 minutes or until cake springs back when lightly touched. Turn onto a tea towel dusted with powdered sugar. Peel off waxed paper and roll up jelly roll style, starting with a short end. Cool on wire rack.In a mixing bowl, combine cream cheese, butter and vanilla and beat until fluffy. Beat in powdered sugar. Unroll cooled cake. Spread filling to within 1" of edges. Roll up again and dust with powdered sugar.
