- White flour - 1 1/4 cup.
- Whole wheat flour - 1 1/4 cup.
- Cocoa - 4 tablespoons.
- Baking powder - 1 teaspoon.
- Baking soda - 1 teaspoon.
- Cinnamon - 1/2 teaspoon.
- Cloves - 1/2 teaspoon.
- Zucchini, finely diced, seeds removed, skin on - 2 1/2 cups.
- Semi-sweet chocolate chips - 1 cup, for icing (OPTIONAL).


How Do I Make Chocolate Zucchini Squares?

Here is how you make Chocolate Zucchini Squares:

- Beat egg whites until fluffy. Add sugar and beat well. Add oil and mix well. Add milk and lemon juice, mix together well. Add vanilla, mix well again!- In separate bowl, mix white and whole wheat flour, baking powder, baking soda, and cinnamon, cocoa, and cloves. - To dry ingredients, add zucchini and mix until the finely chopped or crushed zucchini is coated with the dry ingredients - note that the zucchini seeds should be removed, but the skin left on. - Add the wet ingredients to the zucchini mixture. - Pour into 9 by 12 inch pan. Bake at 325 degrees for 40-50 minutes. - OPTIONAL - when the cake is still hot, pour 1 cup semi-sweet chocolate chips on top. (This is my favorite part of this cake - it dries hard, and gives the cake a nice coating on top!)- Cool completely. Cut into squares and serve with whatever is desired!Makes 35 squares how I cut it - but it can be more if you cut it into bigger pieces.
