Preheat oven to 250?.2. Coat an (8 x 4-inch) loaf pan with cooking spray; line bottom and sides of pans with parchment paper. Coat parchment paper with cooking spray.3. Combine pecans, walnuts and raisins, dates, and candied peel in a large bowl. Lightly spoon flour into dry measuring cups; level with a knife. Add 1/2 cup flour to nut mixture, tossing to coat.4. Combine 1/2 cup flour, cinnamon, salt, cloves, nutmeg, and ginger in a small bowl. Place applesauce and sugar in a large bowl; beat with a mixer at high speed 3 minutes or until combined, scraping sides of bowl occasionally. Add egg and egg whites, separately, beating well after each addition. Add flour-spice mixture; beat at medium speed until blended. Add 1/8 cup rum and extracts, beating at low speed until blended. Stir nut mixture into batter.5. Spoon batter into prepared pan, pressing firmly to pack. Press a piece of parchment paper onto surface of batter.6. Add water to a 11 x 7-inch glass or ceramic baking dish to a depth of 1 inch; place on bottom rack in oven. Place loaf pan on middle rack in oven.
