Line 13 x 9 in pan with foil and lightly grase with cooking sprayPreheat oven to 350Bring water to boil in medium saucepanover med-high.Stir in oats. When liquid returns to a boil add plum amazins and salt. Reduce heat and sinmmer 4-5 min until oats are soft and liquid absorbed.Remove from heat and stir in brown sugar and applesauce. Cool to lukewarm. In large bowl stir togeather flour, baking soda, ginger, Cinnamon, and nutmeg. Mix well.Whip up egg whites to stiff peaks and add vanilla extract (optional step, but makes for more rise).Stiir egg mixture into oats. Stir oat mixture into flour mixture. Mix until just combined and moistened.Pour into baking pan and bake for 30-40 minutes, or until the cake begins to shrink form the sides and a toothpick inserted into the center comes out clean.
