Here is how you make Keto cinnamon rolls:

Preheat oven to 375 degrees. Melt 2 c. shredded mozzarella cheese with 2 oz. cream cheese in microwave on 1.5 mins. In another bowl, combine 2 eggs with 1/2 cup of coconut flour. Mix egg/flour mixture into cheese mixture until blended. Press out into a flat rectangle shape. Melt 3 tbsp of butter brush the rectangle leaving one edge free of butter - this will be used to seal/close roll. Mix 1 tbsp of cinnamon w/ 1 tbsp (or equivalent) of sweetener of your choice (I used Stevia) and sprinkle over the melted butter. Roll the buttered edge as tightly as possible until you meet the unbuttered edge. With the seal down, cut into 1 inch thick rolls and place on a buttered cookie sheet or parchment paper.
