Mix butter and powdered sugar together, scraping the sides of the bowl often.2. Mix in the vanilla extract.3. Slowly mix in the flour in small portions until completely combined. Do not over mix.4. Divide dough in two and wrap in plastic wrap. Once wrapped flatten into a 1" thick disk. Refrigerate for 1 hour or freeze for 30 minutes to harden dough.5. On a clean & floured counter top roll out dough to 1/4" thickness. If you froze your dough it may need a little bit of kneading before it will roll. Do not over knead as the heat from your hands will start to melt the dough too much.6. Using a clean plastic kitchen ruler, score and cut the dough to make 1"x 2" rectangles. Use the edge of the plastic ruler to lift up edge of dough and transfer each cookie cut out to a baking sheet lined with parchment paper.7. Add decoration if preferred. I usually find mistletoe shaped sprinkles with leaves and a red berry and press them into the dough.8. Bake at 325 degrees F for 10-15 minutes (until sides are lightly golden).9.
