Here is how you make Chinese Almond Cookies:

Grind the blanched almonds into flour in a food processor. Mix in a large bowl almond flour, rice flour, sugar, salt and baking powder. Add eggs and oil mixing well. Shape dough into 1 teaspoon size balls, placing on parchment paper covered cookie sheet. Place a halved almond on each and press down well. Brush egg wash on to each cookie. Bake at 350 degrees F. for 15 to 20 minutes.
