Here is how you make Boot Tracks Cookies - Peanut Butter Version:

Preheat a nonstick waffle iron. Cream butter, oil and sugar in a medium bowl. Beat in eggs and vanilla. Add flour, peanut butter powder, and espresso powder. Beat until thoroughly combined. Drop the batter by rounded teaspoonfuls about 1 inch apart onto the preheated ungreased waffle iron. Use a small ice cream scoop or two spoons to place the batter on the waffle iron. Close and cook until the cookies are puffed and cooked through, 1 to 2 minutes. Waffle irons vary, so watch closely and don't let the cookies get too dark. Transfer to a wire rack to cool until just warm. Once cookies have cooled, melt chocolate in a pan over a very low heat. Using fork or spoon, drizzle chocolate over cookies.
