Preheat oven to 350 degrees. With a hand mixer cream the butter and sugar until fluffy. Add the vanilla extract and add the flour and mix at low speed until incorporated. Use your hands to roll the dough into medium sized balls and arrange them on the cooking sheet leaving some space between them (ie: 2 inches). Make a shallow well on top of each cookie (you can use a teaspoon for that or your fingers) and fill the wells with the jam of your choice.
