Mix dry ingredients in seperate bowl, then add dry to the wet. Mix coconut in then add white chips with a "quick" mix (5-10 sec stir). Use mini scoop or tablespoon to place onto baking sheet. Form each dough piece into a compact ball and press with fingers (or use a cup dipped in extra almond meal or granulated no cal sugar substitute, such as stevia in the raw.)Bake in 350* oven for 8-12 minutes. (longer times are required for baking stone usage.) remove from sheet onto cooling rack.Melt chocolate chips in glass, mic-safe container (15-30 sec between stirring until completely smooth) Add 1 T coconut oil to melted chips to help thin out the chocolate for dipping. After cookies are cool, dip 1/2 the cookie into the choclate and place on wax paper to set.
