Pour the liquid off the dates, and RESERVE it. Place dates in food processor and blend until pretty smooth. Add peanut butter, egg replacer, vanilla extract, almond extract and maple syrup, then process again til smooth. Add the ground oats, salt and baking soda and process. Add some of the reserved date liquid as needed. Dough will be fairly stiff. Line baking sheet with parchment and scoop out small amounts and flatten with palm of your hand. Top each cookie with 3 chocolate ships. Bake at 350 degrees for about 10 minutes.
