1 10 jar maraschino cherries (42-28 cherries)
1/2 cup Smart Balance 50/50 unsalted butter blend, softened
1/2 cup Splenda for Baking*
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 egg
1&1/2 tsp pure vanilla
1/2 cup unsweetened cocoa powder
1&1/2 cup all-purpose flour
1 cup semi-sweet chocolate pieces(no imitation chocolate)
1/2 cup low fat sweetened condensed milk

*If using regular sugar use 1 cup. Calories will be 84.5/ cookie


How Do I Make Buried Cherry Cookies?

Here is how you make Buried Cherry Cookies:

Drain cherries, reserve juice. Halve any large cherries. Beat butter with an electric mixer on medium to high speed for 30 seconds. Add the sugar, baking powder, baking soda and salt. Beat until combined, scraping bowl. Beat in egg and vanilla until combined. Beat in cocoa powder and as much of the flour as you can with the mixer. Stir in any remaining flour(NOTE: I recommend using a heavy duty stand mixer such as KA for this recipe.)Shape dough into 1 inch balls. Place balls aout 2 inches apart on an ungreased cookie sheet. Press your thunb into the center of each ball. Place a cherry n each center.FOR FROSTING: In a small saucepan combine chocolate pieces and sweetened condensed milk. Cook and stir over low heat until chocolate melts. Stir in 4 tsp reserved cherry juice. Spoon 1 tsp frosting over each cherry, spreading to cover. If necessary frosting may be thinned with additional cherry juice.Bake at 350 for about 10 minutes or until edges are firm.
