1 2/3 cup all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup (1 1/2 sticks) unsalted butter, softened
3/4 cup packed brown sugar
1/3 cup granulated sugar
1 teaspoon vanilla extract
1 large egg
1 3/4 cup (11.5-ounce package) milk chocolate chips
1 cup coconut, (toasted if desired)
1 cup walnuts chopped

Here is how you make Island Cookies:

Preheat oven to 375 degrees.Combine flour, baking powder,baking soda,and salt in a small bowl.Beat butter, brown sugar, granulated sugar, and vanilla in a large bowl until creamy.Beat in egg gradually beat in flour mixture.Stir in chocolate chips, coconut and nuts.Drop by slightly rounded tablespoon onto ungreassed baking sheet.Bake for 8 to 10 minutes or until edges are lightly browned. Cool on baking sheet for 2 minutes, then remove to wire rack and cool completely.Note: semi-sweet chips, semi-sweet mini chips, white chips or butterscotch flavored chips may be substituted.
