I got this from my nutritionist. there is a frosting recipe which I will add but I prefer them just sprinkled with splenda and cinnamon. You can even stact them with raspberry fruit only jam that way and have tarts. the orginal recipe called for lemon not vanilla extract and if I am frosting them I use almond flavoring. there is options galore and they are quite quick and funn to make.

2 Tbs fat Free Sour cream
1/4 cup Egg Beaters or 1 egg
1 tsp flavoring can be any that you prefer
1 cup powdered sugar
2 cups flour
1 tsp baking Powder
1/4 tsp salt
1 Tb Splenda
Ground cinnamon as garnish

Optional Frosting
2 cups Powdered sugar
1/2 tsp flavoring
2 to 3 Tbs Fat Free milk

Here is how you make Low Fat Easy Sugar Cookies:

Put the softened shrotening,fat free sour cream and egg beaters (you may use 1 egg instead) and flavoring in bowl and beat until smooth. Mix in sugar.add flour baking powder and salt. (this takes about 10 minutes total) You can put them in the refrigerator from 4 hours to overnight. If you are really in a hurry you will need to add more flour but you can roll them out right away. Bake in pre heated 375 degree oven.Roll dough on flored surface to less then 1/4 inch thick. Cook Cookies into shapes with 2 inch cookie cuttersBake on a sprayed cookie sheet fro about 10 minutes or until they start to brown lightly.Options: Before baking the cookies mix 1 TB splenda and about 1/2 tsp cinnamon. sprinkle on the cookies before putting them in the oven. Frosting: Mis confectioner's sugar, extract and enough milk to make a spreadable consistencey. frost cooled cookies and sprinkle very lightly with cinnamon. sprinkle 1/2 of the cookies with splenda and cinnamon and leave 1/2 plain. Put fruit only jam on the plain cookie and top with the one that has splenda and cinnamon. I bet you will come up with all kinds of other ideas.
