These have become my signature cookie. They are very flavorful, and I make them very thin, so they are nice and crispy. The lemon and black pepper combination is delicious, and I love the texture of the cornmeal. Don't be afraid to add extra lemon zest and pepper if you like as well. Prep time does not include chilling the dough, which is necessary to make these very thin cookies.

Here is how you make Lemon and Black Pepper Cornmeal Cookies:

In a bowl, combine the flour, cornmeal, pepper, and salt. Whisk them to combine.Cream together the butter, sugar, and lemon zest in another bowl until light and fluffy. Then beat in the egg yolks.Add the flour mix to the butter mix, and stir until just combined. The dough will be crumbly at this stage.Press the dough together and form it into 2-3 logs, roughly 1.2 inches thick. Wrap the dough in plastic wrap or waxed paper, and chill for at least 2 hours. You can bake them any time over the next few days. You can freeze it at this stage as well, and slice off a few cookies at a time.Once the dough is completely chilled, preheat the oven to 400 F, and line a baking sheet with parchment paper.Take out the dough one at a time, and slice into rounds roughly 0.5 cm thick. Try to keep the slices as consistent as possible. Lay them out on the baking sheet. They will spread some, but not tremendously.Bake for 5-7 minutes, but watch very carefully.
