I wanted to bring a rich spicy flavor into a non-christmas type cookie. I used to run a restaurant and I developed and refined this recipe there. What Are The Ingredients For Dragon Eyes cookies Recipe?The ingredients for Dragon Eyes cookies are: 1? cups lard softened2 cups brown sugar, lightly packed 1? cups granulated sugar 2 tsp baking powder ? tsp baking soda 1 tsp salt 1? tbsp Chinese five spice 1? tbsp orange extract (or 2 tbsp orange peel/zest) 3 extra large/jumbo eggs, or 4 medium eggs 1 tbsp vanilla extract (2 tbsp if using imitation) 3? cups all purpose flour 1? cups oatmeal 4 to 5 cups dried cranberries (to desired amount) 1 cup dried currants How Do I Make Dragon Eyes cookies?Here is how you make Dragon Eyes cookies: In large mixing bowl, beat lard (can substitue unsalted butter) with electric mixer on medium to high speed until soft, add brown sugar, granulated sugar, baking powder, baking soda, salt, chinese five spice, orange extract, and continue beating until blended. Add eggs and vanilla while beating making sure to get liquid consistent throughout. Beat in as much of the flour as you can with the mixer. Stir in remaining flour by hand. Add the oats and stir/mix thoroughly. Add the cranberries last, stirring in with a wooden spoon. Drop cookies by the rounded tablespoon onto NON-greased aluminum cookie sheet (the lighter in color, the better as it won?t scorch the bottom of the cookies. You can use an air bake, but warm the pan for 3-4 minutes first before spooning on cookies or the center of the bottom won?t cook properly) and bake in the over for 8-10 minutes until the cookie is just starting to brown.
