Baking Powder, 1/2 tsp
Baking Soda, 1/2 tsp
Salt, 1/2 tsp
Vanilla Extract, 1 tbsp
Egg, 1 large, lightly beaten
Old fashioned rolled oats, 1 1/3 cups
Whole Wheat Flour, 1 1/2 cups
Natural almonds, whole, 1 cup, roughly chopped
Dried apricots, 1 1/4 cups, chopped into small bits
Sunsweet Ones, Prunes, approx. 1/2 cup (about 8), chopped into small bits
Dried Cherries, 1/4 cup, chopped into small bits


How Do I Make Heart Healthy Fruit and Nut Oatmeal Cookies?

Here is how you make Heart Healthy Fruit and Nut Oatmeal Cookies:

Preheat oven to 325 degrees. Cream together light butter, Splenda Brown Sugar Blend, all spices, baking powder, baking soda, salt and vanilla. Beat in egg. Add oats, flour, chopped nuts. Mix well. Add all chopped fruits. Mix well. Drop cookie dough by small spoonfuls onto non-stick baking sheet. Bake for approx. 12 - 13 minutes. Do NOT OVERBAKE! Cookies should just start to turn brown on edges but still be soft in center. I used a small cookie scoop, 1.5 inches diameter, and got 58 cookies which equals only 68 calories per cookie!Number of Servings: 58Recipe submitted by SparkPeople user MBTHOMPSON.
