This is a yummy variation I made years ago from a recipe off a box of a Kroger brand of oatmeal! What Are The Ingredients For Katie's Yummy Oatmeal Cookies Recipe?The ingredients for Katie's Yummy Oatmeal Cookies are: 2 1/2c oatmeal2 c flour 1 c sugar 1 c brown sugar, packed (I usu use all brown sugar) 1 tsp cinnamon 1 tsp baking soda 1 tsp baking powder 1 tsp salt 3.5 oz sweetened coconut (1/4 of 14 oz pkg) 1 c coconut oil (or a combination of oil and butter) 2 eggs 2 tsp vanilla extract 2 Tbs (1 oz) water, if dough is too stiff How Do I Make Katie's Yummy Oatmeal Cookies?Here is how you make Katie's Yummy Oatmeal Cookies: Mix all of "dry" ingredients first. Then mix "wet" ingredients (except water) until creamy in tall bowl or large measuring cup. Pour the creamy mixture over the dry mixture and mix well with large spoon. I usually then sprinkle the water over the top, if needed, to get the dough to stick together well. Roll into balls, large walnut size (a little less than 2 Tbs...I use a "Chip Clip" cookie scoop), place on parchment paper on cookie sheet and flatten with the palm of your hand or utensil. Bake at 350 for 10 minutes, check and bake another minute, if needed. Cool on cookie tin a few minutes and remove to cooling rack til cool. Package in airtight container when cool. These freeze well!I make all different variations of these recipe, sometimes adding raisins, M&Ms, butterscotch chips, etc...
