* Cinnamon, ground, 1/2 tsp
* Vanilla Extract, 1/2 tsp
* Baking Powder, 1/4 tsp
* Salt, 1/4 tsp
* Egg, fresh, 1 large
* Oats, 2 1/2 cup
* *Whole Wheat Flour, 1 cup
* Cranberries, dried, sweetened (craisins), 1/2 cup
* Semisweet chocolate, 1/2 cup large chips
* Pecans, 1/2 cup, chopped


How Do I Make Leann's Favorite Healthy Oatmeal Cookies?

Here is how you make Leann's Favorite Healthy Oatmeal Cookies:

Heat the oven to 375 degrees. Mix all the ingredients EXCEPT the oats, flour and add-ins (pecans, chips and dried fruit). Once that is mixed thoroughly sift in the flour and then add the oats and fully incorporate. Then quickly stir in the add-ins but don't over mix. Drop the dough by rounded spoonfuls about 2 inches apart on a cookies sheet. (I use parchment paper to keep them from sticking or you can use a silpat if you have one - they are cool!) Bake until light brown which takes about 10 to 12 minutes. Remove them from the cookie sheet to a cooling rack if you have one or pull the parchment off the pan onto the counter to let them cool completely. This recipe makes about 2 dozen cookies.
