Here is how you make No Bake Oatmeal Peanut Butter "Missouri" Cookies:

This recipe is all about timing and chemistry. Even though I make these cookies about once a week (they're my families favorite) they still turn out a little different each time, and occasionally they don't turn out well at all. Perfect in my opinion is either soft and chewy or slightly crumbly but still firm, like fudge. To avoid them from failing, be sure to stir continuously and have your oats, peanut butter, vanilla, and parchment paper all prepared ahead of and beside you, so you can stir it all in as soon as you take the pot of the burner. First, lay two large pieces of parchment paper (you may only need one, depending on if you want less larger cookies or more little cookies and how far apart you drop them. Having made this recipes dozens of times, I've learned to squeeze them all together on one, but two is good just in case).Second, measure out your oats, peanut butter and vanilla and set beside the stove, each ingredient separately. Third, put Milk, sugar, cocoa, and coconut oil into medium/large pot on stove. Do not turn the heat on until you have all the ingredients in the pot. Then, over medium-high heat, stir the mixture with a large spoon continuously. When it start to bubble just enough that a few bubbles show while stirring slowly, stir for exactly one more minute. The last 10 seconds or so should be a very full boil. After one minute immediately take the pot off the burner (I just move it to the other burner) and add in the vanilla, peanut butter, and oatmeal, stirring just briefly (5 seconds max) after adding the vanilla and peanut butter then mixing it all together fully and quickly after pouring in the oatmeal, probably about 10 seconds. Then use your stirring spoon to scoop out the batter onto the parchment paper. The cookies will solidify as they cool.
