Combine flour, baking powder, baking soda, salt, cinnamon & ginger in a medium mixing bowl. In a larger mixing bowl cream together butter, both sugars on medium speed. Add egg, vanilla & applesauce. Mix in dry ingredients. Add oats & diced peaches. Drop on parchment covered baking sheet. Bake at 350 degrees for 10-12 minutes or until edges become light brown. Cool on wire racks.
