Preheat oven to 375 degrees.Mix dry ingredients together in a bowl. Put tofu in food processor and blend until smooth.Put pumpkin, tofu, vanilla in a mixer. Add dry ingredients and blend until mixed. Add raisins to mixture. Place silpat sheets on two baking sheets. Scoop up a heaping teaspoon of cookie dough and place on the sheet space 2 inches apart. Bake for 15 minutes.
