1/3 cup brown rice syrup
1/2 cup maple syrup (can reduce to 1/3 if desired)
1 cup pitted finely chopped dates or figs

Here is how you make Date Cookies:

Makes 33-35 tablespoon sized servings.Preheat oven to 325.Spread oats and walnuts side by side on a cookie sheet. Toast in oven for 10 minutes.Put half of the oats and walnuts in a food processor and grind to a fine meal. Add the rest of the oats and pulse a few times. Pour into mixing bowl. Add the rest of the oats and the salt and cinnamon. Mix well.In another bowl, mix the olive oil and syrups. Combine well with a fork.Mix the wet ingredients into the dry and stir very well.Fold in the dates last.Spoon in tablespoon sized balls onto cookie sheets lined with parchment paper.
