I used 4oz of egg white in this recipe and rather than 2/3 cup of vegetable oil, I used 1/3 cup of oil and 1/3 cup of butter. For a little less saturated fat, use only vegetable oil.

Heat oven to 400degrees. Beat egg whites with a fork. Stir in oil, vanilla, and rind. Blend in sugar until mixture thickens. Stir together flour, baking powder, and salt; blend in. If dough is thin, add another 1/4 cup of flour then chill for an hour. Gently roll level tablespoonfuls of dough into balls and place 2" apart on ungreased baking sheets. Flatten with the bottom of a glass dipped in sugar. Bake 8 to 10 minutes or until golden brown. Remove from baking sheet immediately.
