Here is how you make Reb's Sugar Cookies (diabetic friendly):

Heat oven to 350F. Whisk together flour, baking powder and soda, and salt into a bowl. Set aside. In another bowl, beat the butter sticks and Splenda until fluffy. Add egg whites and vanilla until just combined, do NOT overbake. Slowly stir in the dry ingredients mixture (flour etc from earlier) until combined.Coat cookie sheets with cooking spray. Cut the dough in half and roll each half out into even 1/4-inch thickness. Cut out 18 cookies from each half and place them 1 inch apart on the greased cookie sheets until firm (about 6 to 8 minutes).
