1/4 c. granulated sugar
1 3/4 c. white flour

4 tsp. ground ginger
1/2 tsp. cinnamon

Wet:

1/2 tsp. vanilla extract
3 T. molasses
1/2 c. canola oil
1/3 c. Silk Vanilla soy milk

Note: sugar used to roll cookie dough in or crystallized ginger for garnish has not been accounted for in calories. I would assume it adds about another 20 calories to the serving.

Preheat oven to 350 degrees.Mix dry by itself, then add all wet ingredients to the dry and mix.Form it into one big ball, then place on cutting board or clean kitchen counter.Form into a rectangle about 9 inches wide by 6 inches tall.Then use a butter knife to section evenly, this helps you get even sized cookies.Take each section then roll it into a ball. Then spread some granulated sugar on your cutting board.Roll the cookie ball into the sugar, until covered with sugar. Transfer to baking sheet, then repeat with other cookie balls. After you are done, gather up some crystallized ginger, and cut them into small pieces and place one piece in the middle of each cookie.
