FILLING

36 oz. (4 1/2 8 oz packages) fat free cream cheese, softened
1 2/3 c sugar
1 1/4 c egg substitute
1 1/2 c irish cream liquer
1 TBSP vanilla extract
3/4 c semisweet chocolate chips

TOPPING

1 c whipping cream
2 TBSP sugar
1/2 c semisweet chocolate chips, melted

DECORATE
1/4 c semisweet chocolate chips

Here is how you make Chrissy's Irish Cream Cheesecake:

For filling; beat cream cheese until smooth; add sugar and egg substitute beating until fluffy; add vanilla and liquer mixing well. Sprinkle 3/4 c. chocolate chips over crust; spoon filling over chocolate chips and bake 1 hr. and 20 min. to 1 hr. and 30 min. or until center is set. Cool completely in pan, remove sides of pan.For topping; beat cream and sugar in large chilled bowl until stiff; continue to beat while slowly adding melted chocolate. Spread over cooled cake.To decorate; with remaining 1/4 cup of chocolate chips; melt and pour onto baking sheet until set but not firm. Pull a cheese plane across chocolate (if too firm will break, remelt and cool as necessary) to make curls -OR- for an easier version let chocolate set and just grate chocolate over whipped topping.Refrigerate until ready to serve.
