Here is how you make Low-Carb High-Protein Ice Cream:

Whip heavy cream in a cold bowl to stiff peaks (about 2 minutes). In a food processor (I use a Ninja) combine the remaining ingredients and blend until smooth. (Don't blend it too long or it will liquefy! You want smooth and fluffy). Fold the cottage cheese mixture into the cold whipped cream and freeze the entire bowl for about 2 hours. Then add any mix-ins (cookies, candies) and fold them in. Freeze 8 hours or more to get scoopable consistency. Divide into 10 portions and keep in freezer.For chocolate version - Same as above but use chocolate protein powder plus add five tablespoons of cocoa powder to the cottage cheese mixture.Mix-in's: Try a dash of cinnamon in the vanilla base, and top with crushed Cinnamon Toast Crunch (tastes like "fried ice cream"). - OR - Measure out 5 portions of your favorite candy or cookies, chopped, so that each serving has half-serving of candy/cookies.
