Here is how you make Low carb scoopable ice cream:

Heat heavy cream, half& half, egg yolks over med/low heat, whisking the whole time. Cook until thickened, it will coat a spoon and if you swipe across the spoon with your finger, the mark will stay. Add sweeteners and vanilla (more flavor options below). After it is off the heat, use a sifting device and SLOWLY sprinkle xanthan on top, whisking it in the whole time. I use a little mesh tea ball strainer. If you add it too quickly, it will form lumps. This ingredient is what keeps the ice cream soft enough to scoop. Without it it is regular low carb ice cream that freezes hard as a rock and has to be set out to soften in advance. After this is done you can add other flavorings. I like to add 3 Tblsp. instant coffee. But you can add maple, nuts, chocolate anything you wish. I also like orange/vanilla flavor for a dreamsicle flavor. Toasted pecans (in butter) with caramel flavor make a great butter pecan ice cream! Chill the mixture for at least 6 hours. It will be almost as firm as pudding after chilled. Taste when cold. You may have to add a little more flavor or sweetener because cold make things less flavorful. Then freeze according to your machine's instructions. If you are adding nuts, chips, etc. Do it when it is almost done. When the ice cream is thick but not set yet.
