2 TSP Meringue Powder, sifted into powdered sugar (Optional, this is to give the icing a crust, I used in this recipe so that it could hold the topper I placed on each cup cake, without it your icing will be softer. It does not affect the flavor).

1 stick (1/2 cup or 4 ounces) unsalted butter, at room temperature

1/2 cup High Ratio Fat Shortening

3/4 cup Irish Cream Whiskey


How Do I Make Irish Cream Icing?

Here is how you make Irish Cream Icing:

Whip the butter in the bowl of an electric mixer, or with a hand mixer, for several minutes. You want to get it very light and fluffy. Slowly add the powdered sugar/meringue powder mixture, a few tablespoons to a 1/4 cup at a time. As you see the icing get dry alternate adding the Irish Cream with the powdered sugar, about an 1/8 cup at a time.
